Department Curriculum

The curriculum includes 11 modules divided into video lessons,

Module 1. Fundamentals of Cell Biology and Genetics

The cell: organelles, structure, and functions. Tissues and body systems. Membrane transport, signaling, and receptors. Genetics, epigenetics, and DNA. Nutrition: why it matters, what to eat, and in what amounts. Water — its biological role, daily needs, and how to choose it.

Module 2. Carbohydrate Biochemistry

Structure, classification, sources, digestion, and daily carbohydrate requirements. Carbohydrate biochemistry: the Krebs cycle, fructose, glucose, lactose, and cofactors. Types and uses of dietary fiber. Hormonal regulation of carbohydrates.

Module 3. Protein Biochemistry

Structure, classification, sources, requirements, and digestion of proteins. Amino acids and nitrogen balance. Disorders of protein metabolism.

Module 4. Lipid Biochemistry

Lipid biochemistry, cholesterol, fat metabolism, and functions. Omega-3, -6, and -9 fatty acids, as well as trans fats. Atherosclerosis and disorders of lipid metabolism.

Module 5. Fat-Soluble Vitamins and Their Biochemistry

Vitamins A, D, E, and K: their structure, sources, absorption, transport, excretion, functions, deficiency, and toxicity.

Module 6. Water-Soluble Vitamins and Their Biochemistry, Part 1

Structure, sources, absorption, transport, excretion, functions, deficiency, and toxicity of vitamins B1, B2, and B3.

Module 7. Water-Soluble Vitamins and Their Biochemistry, Part 2

Structure, sources, absorption, transport, excretion, functions, deficiency, and toxicity of vitamins B5, B6, and B7.

Module 8. Water-Soluble Vitamins and Their Biochemistry, Part 3

Structure, sources, absorption, transport, excretion, functions, deficiency, and toxicity of folates, vitamin B12, vitamin C, and other B vitamins.

Module 9. Macrominerals and Their Biochemistry

Potassium, sodium, chloride, calcium, phosphorus, magnesium, sulfur, and other macrominerals essential for the human body, as well as their structure, sources, absorption, transport, excretion, functions, deficiency, and toxicity.

Module 10. Trace Minerals and Their Biochemistry

The biochemistry of iodine, iron, copper, manganese, cobalt, zinc, selenium, fluoride, lithium, chromium, and toxic metals, as well as their functions and impact on our health.

Module 11. Metabolism and Anthropometry, Practical Skills, and Dietetic Management

Basal and energy metabolism, anthropometry, medical history, measurement formulas, and dietetic management.
